Taste the Rainbow

The phrase “Taste the Rainbow” was made popular by the Skittles commercials, but did you know when you eat your meals you should be eating the colors of the rainbow. The more colorful your plate the more beneficial for your body. When you are eating colorful, do you know the benefits of each color? Each color has different benefits, let me break down the colors and the benefits for you.

Green – When you fill your plate with spinach, broccoli and even kiwi you are boosting your immune system, restoring energy, vitality, and you are also reducing your risk of cancer.

Red – When you eat tomatoes, raspberries, and strawberries you are improving your skin, decreasing risk of heart disease and stroke. Red food lowers your blood pressure and LDL cholesterol and you are reducing your risk of diabetes.

Yellow/Orange – When you are chomping on carrots, squeezing those lemons and oranges. You are promoting your vision and healthy eyes, reducing the risk of prostate cancer. Eating these color food elevates collagen formation, as well as contribute to healthy joints.

Blue/Purple – Grab those blueberries, eat that purple cabbage and eggplants. You will be boosting your memory, fighting ulcers and helping your body fight inflammation.

These are just a few of the benefits you receive when you are eating the rainbow. Your plate should be colorful. Go ahead load your plate with colors, your body will thank you.

3 Ways to Curb Your Appetite

I get questions from you guys and one question has been consistent over the last few months. The number one question I have been getting as of late is “How do I curb my appetite?” I am so pleased that you guys are exercising and making mindful changes in your diet. You are fighting the good fight, but sometimes it gets tough and boy do I know it. So, I figured I would answer it in an article. I get it, when you are watching what you’re eating, making sure you are eating the right portions and you are hungry an hour later, it’s frustrating. Here are a few things you can do to suppress your appetite enough to make it to your next planned meal time.

Drink – When you are done with your meal and still feel a little rumble in your tummy, grab your cup. You can have water or even green tea. Make sure you drink at least 2 glasses (which is a water bottle). Many times, when we think we are hungry we are thirsty. You can also switch it up and have something hot. Coffee or tea is good, be mindful of what you put in it. Sip it slow and savor it.

Brush – It sounds weird but pack that toothbrush in your purse or briefcase. When you are trying to focus on your work but your stomach is grumbling and is focusing on food. It’s hard not to keep checking your watch to see if it’s time to eat and it’s not. Step away for a moment take a break. Grab your toothbrush and head to the restroom, brush your teeth for at least 2 minutes. By brushing your teeth, you disrupt your thoughts of eating and most people don’t want to eat right after they brush. It could hold you over till meal time. Trust me it works and not only have you held off the munchies, your teeth will be pearly white.

Chew Gum – When your stomach is talking to you, it is hard to ignore it. However, you can distract it a bit by chewing gum. Chewing gum sends signals to your brain that you are full and chase away those cravings and hunger pangs.

Stay strong make sure you are eating enough protein, fiber rich foods and eat calories vs drinking them. Implement the tricks as needed, they will help you get through those 3 – 4 hours till your next meal. You will hit your target.

Spring Cleaning your Refrigerator: Get Rid of the Junk (food)

It’s almost time for Spring cleaning.  I know a lot of us do Spring cleaning, we clean the walls, windows and floors.  Do you clean out the kitchen?  Yes, I know we clean the refrigerator while Spring cleaning; but I am not talking about taking the food out and cleaning the shelves and putting the same food back.  I am talking about cleaning the refrigerator out of unhealthy foods.  When you take the food out, read the labels of the merchandise you have and determine if they are worthy to be placed back on your clean shelves. Here are the 4 things I want you to look for on the food labels.

1.  Serving Size – make sure you know how many calories are in 1 serving.  Keep in mind, if you eat more than 1 serving, make sure you multiply that amount.  Here is an example, if 4 crackers are 40 calories and you eat 8 crackers take 40 X 2 = 80.

2.  Fat –  You are looking to see how much fat is in each serving.  You generally want less than 10 grams of fat per serving.

3.  Sugar – Check the label to see how much sugar it contains per serving.  Sugar is tricky because your sugar intake is based on a day not by meal.  It is recommended that women consume no more than 6 teaspoons or 24 grams a day and men should not consume more than 9 teaspoons or roughly 36 grams per day.  You can spread it out for the day or splurge on one sugary treat a day.  I generally try to spread it out throughout the day but it is your choice make it easy for you.

4.  Fiber –  You want to see how many grams of fiber are in each severing.  You are looking for a least 3 grams per serving.  If it is less than 3 grams you can just consider it junk food.

Keep in mind if you have more than 1 serving, you must multiply each category by the servings you consume.  Once you have cleaned out your refrigerator move on to your pantry.  When you are done, you can either donate your unopened food items to a homeless shelter/church and just throw away the opened other junk.  Only have healthy food in your clean kitchen.  Your body will love you for it!

Drive Thru with Healthy Choices

The other day I was on the phone with my best friend while she was driving home from her Mom’s house (which was about an hour and half drive). She was in search of a place to eat that was fast and somewhat healthy. At almost every exit McDonalds billboards were waving at her, (which by the time she passed about three of them they started looking more inviting). She finally found a place to get something to eat without feeling so guilty for putting crap into her body. The very next day, it was I who was driving and starving trying to find a place that I could drive thru and order, grab something and keep it pushing. All I kept seeing was McDonalds, Bojangles, Wendy’s …you get my point. So, she suggested that I write a blog about how to do the drive thru with dignity. You know, drive thru without losing all sense of control. I don’t know about you but when I am hungry I can care less what I am shoving into my mouth, I just want it fast. However, as soon as I have eaten the last of the fries, the guilt sets in. Where was that guilt when I was shoveling those fries into my pie hole? Any who, here are five fast food restaurants that are everywhere. Here are a few food tips, so that you can drive thru and pick a meal that will satisfy the beast without beating up your self-esteem. By the way, I see a lot of Bojangles but I have never eaten there so I don’t know what to suggest, other than keep driving until you find one of these.

I hope this helps, because speaking from experience when you have an idea of what you want vs. just driving up to that menu you tend to make better choices. When I am hungry and not prepared, I could order one of everything on the menu and not think anything of it…. until it is all gone of course and the guilt sets in. Then I chastise myself and feel guilty all day. Save all the guilt and be prepared, know what you want and feel free to make changes that will fit your health needs. Keep in mind these are just to use in a pinch, not for your daily meal. You are in control, you are prepared. Oh FYI, my BFF and I both ended up going to Taco Bell.

Have you ever heard this? Girl, I’m going to skip breakfast and lunch, so I can drop a few pounds before the party tonight, then when I get there, get my grub on. Now, tell me do you really think that will work? FALSE, as a matter of fact you are doing more harm than good to your body. Skipping meals puts your body in starvation mode. It will hold on to everything you have stored, because it thinks this could be it’s last meal. Your brain turns to mush and you can’t focus, plus you get hangry. Yeah, you heard me, hangry is real (hungry and anger). You know as well as I do that you are most definitely going to that party and going overboard on the eating. Trust me I know. When your blood sugar drops, you are just not yourself. You lash out and become very mean. Beyond being mean, you self-sabotage by over-eating when you finally get your hands on food. Binge eating happens and then you end up GAINING weight, which was your reason for skipping meals in the first place, was to lose weight. So don’t skip meals, eat sensibly, without having heavy meals but put something in your body so you can function. You must feed your body in order to lose weight, I know it sounds crazy, but it is true.

Come on guys say it with me ”Everybody in my family is big boned!” Hmm, have you ever seen a big-boned skeleton? I haven’t but, I have tried to use this one myself! But it is false! Your genetics make up 70% of your size, 10% diet and 10% fitness. We, as a family tend to be about the same size because we eat the same way. We generally have the same eating habits. Let’s break the cycle. It really isn’t as hard as you think. Something you can do today to make a change, eat one healthy meal today, go ahead make your next meal balanced, appropriate portions and full of leafy vegetables.

Here is another one we have all heard “I don’t eat after 8pm, I don’t want to gain weight.” This is so FALSE. Unless you go to bed at 8 you should still give your body fuel. If you are awake your body is still functioning. You should eat every 3 to 4 hours no matter the time. I am not saying eat a big mac and fries late at night but eat something like nuts, fruit, and even popcorn. You want something light and satisfying so that your metabolism keeps working. The only time you don’t eat is when you are asleep, hence breakfast! You wake up and eat, breaking that fast! You have to eat to lose weight (remember myth #2, no starving the body).

I think I am so, over this, let me repeat so OVER people doing this! It is FALSE you are not going to lose weight just because you are going vegetarian. Elephants are vegetarian and they are not skinny. However, the lions are meat eaters and they are lean, fast and powerful. Just because you are given up meat doesn’t mean that your food doesn’t have calories. It is true if you stop eating meat and are eating plant based food, eating more fruits and vegetables, which tend to be less calories and really filling, you can lose weight. But if your idea of being a vegetarian is eating larger portions of high calories food like French fries, creamy pasty and of course that wonderful veggie pizza then you are most likely going to gain weight. The key is to eat a balanced meal, proper portions even with meat! Me myself I love being a Lioness!

I saved the best for last! Because this was surely me! It is False. I was that chick who was at the gym every morning at 5:30am when they opened, did my cardio, hit the weights and ate EVERYTHING I wanted. Oh yeah, I was a size 24. I would totally tell myself, I can eat this, I work out! Well so not true! Losing weight is very simple, it’s all about the numbers, calories in vs. calories out! Math is not my favorite subject but hey, I figured it out. In order to lose weight, I had to burn more calories than I consume, simple!

Be Like a Tree…Change and Let GO!

More than 10 million women are suffering with their body image and it can affect your self-esteem. I am one of the 10 million women that suffers with their body image. I confess, I am coming clean and speaking 100% honest to you. I have lost over 115 pounds and still suffer with my body image. When I look in the mirror I don’t see the image that everyone else sees. It is weird to explain to those of you who have not lost a lot of weight or even gained weight, our minds eye sees what it wants to see versus with is really reflected in the mirror.

You have seen women walking down the street and think, what in the world? Did they NOT look in the mirror before they left the house? (or it could be you) Chances are they did and they really liked what they saw. That is why they are walking out in the streets head up and chest out. It’s so hard to judge others because I know I am guilty of it myself. Almost all of us were either small and gained weight or big and lost weight, but the true test is how we adjust. There are many things that need to adjust, our wardrobe, our attitude, our mind set. We must adjust to reflect that change that has physically taken place. I know that it is hard for us to see our true image, the image that others see us as, our minds eye is very powerful, trust me. Let me share with you some of the tricks and tips that I have learned to use to view myself.

When I look in the mirror, I see a little chunky Elizabeth looking back at me. But in order to see what others see, I take a picture of myself….the camera does not lie. Have you seen a picture of yourself and say “Do I really look like that?” or “Do I look fat?” Well it could be the lighting, it could be that you are in mid smile or mid conversation but your body is what it is. So if you say Dang I look fat in this picture…..that’s probably how other people see you. It could be a million reasons why the picture is not flattering but if you are finding yourself saying “I look fat” in almost every picture you take, you really should look at yourself as you are and not as you were.

There are several things you can do to help improve your self-image and self-esteem. We all know the most obvious is working out and eating right. When we take time to be good to our bodies we really feel good about ourselves. Our self-esteem gets a boost regardless of the scale, we feel as though we are in control, we are making ourselves strong and healthy, instead of letting everything control our bodies.

Another way to feel good about yourself is get new clothes, that fit! I know you used to wear a size 8 but now you are a size 10 or vice versa. No one sees the size of your clothes, the tag is on the inside of your clothes for a reason. Find the size that fits your body style no matter the size on the tag. When you are wearing the proper size jeans no one is saying Dang, I wonder what size those jeans are she is wearing. They are saying Dang she is rocking those jeans!! However, try to squeeze your size 10 into a size 8 and the responses will be a whole lot different. First of all, you won’t feel comfortable and others will be able to tell that as well.

Try a new hair style. Getting a new do is hard, trust me I know. If you have had the same hair style for the past 10 years, it’s time for a change. A cut, new color or even a part on the opposite side. Change is good, not easy but good, it pushes us out of our comfort zone and shakes us up a bit. The great thing about hair is, that it’s just hair and it will grow back or easily change back to what you had before. Try to sit with that new do for at least 4 weeks before going back to your safe style.

Let’s take a lesson from the trees, watch how they change and let things go. This is a great time of the year to clean out your closet, set those new goals, change and let go of the old.

Getting back into the routine

Have you ever been on vacation and found it hard to keep up with your skincare routine? If you are anything like me, when being on vacation you dont want to be bothered with things like that. Mainly because you may get tired :). I know its horrible for a beauty enthusiast to say. Having spent about 3 1/2 days in St. Augustine FL, with the incredible heat I found that there was no reason to do to much knowing it would get sweated off but still lathered up with sunscreen. I love my skincare routine so today I am going to share my steps on how I “baby step” my way back into a healthy skincare regimen. By healthy I mean no more soda, alcohol, fried foods etc. You know all the stuff we tend to eat and drink when on vacation lol.

When I got home the first thing I did was unpack all my skincare products and put them back in their original places. I did this thinking that if my mind was set to know they were back in place I would automatically do it tonight. If I kept them in their bag then it would probably be that I would not cleanse my face at all. Next, I went straight to the fridge and filled my water bottle up. Another “mind trick” that if it was already done more than likely I would start drinking and filling it up from then on.

Next get rid of all junk food!!! Junk food is one of the culprits to breakouts, dry skin etc. It literally will suck the life out of your skin. If that means finishing everthing then go ahead and do so but it will be out of the house. This will also help if you want to start back on your healthy eating. I find that if I do that then I have no choice but to eat all the healthy stuff. *wink* lol

From Miami to Tampa Bay

Awaken your sweet tooth Bahama style

PIÑA COLADA BREAD PUDDING (recipe courtesy of Bahama Breeze restaurants)

Bahama Breeze

INGREDIENTS:
Butter ¼ Cup
Cuban Bread Cubes 3 Quarts
Eggs 2 ½ Cups
Sugar 1 ¼ Cups
Milk 5 Cups
Vanilla Extract 1 Tbsp
Coconut Rum ½ Cup
Shredded Coconut ½ Cup
Canned Pineapple, diced ½ Cup

PREPARATION:
Toss 3 Tbsp of melted butter with the Cuban Bread Cubes, place on a sheet pan and place in an oven at 350ºF and toast until golden. Brush a medium sized casserole dish with one Tbsp of melted butter and add the toasted bread cubes. Mix all the remaining ingredients together and pour over the bread cubes. Press down on the bread cubes until they absorb most of the liquid. Bake in a 300ºF oven for 1 hour or until firm in the center. Serve warm and enjoy!
Coconut Créme Anglaise
Serves: 5-6

INGREDIENTS:
Heavy Whipping Cream 1 ½ cups
Egg yolks 2 each
Sugar Powdered 10X ½ cup
Coconut Rum ¼ cup

PREPARATION:
1. Add the cream, egg yolks, and sugar in a small sauce pan on medium heat.
2. Stir constantly using a cooks spoon until the sauce starts to thicken; about 8 – 10 minutes.
3. Add the rum and stir to evenly mix. Place in a clean container and place in an ice water bath.
4. Place in the refrigerator to chill to 40ºF.
5. Serve with our Pina Colada bread Pudding
