It contains tuna that Tina chose to use because “it’s a heart-healthy protein that is loaded with omega-3 fatty acids and is easy to use.”

Make Merry , Celebrate, and Savor Tina’s Exclusive Recipe:
Smokey Mediterranean Tuna Dip ~ Created by Tina Ruggiero, M.S., R.D.
Yield: 1 ½ cups
Time: 15 minutes
4 oz. low-fat cream cheese, at room temperature
2 oz. reduced fat sour cream
1 (5 oz.) can tuna packed in olive oil, drained
2 Tbsp. finely chopped onion
1/3 cup/2 oz. finely chopped cucumber
2 Tbsp. finely chopped dill
1 Tbsp. lemon juice
½ tsp. smoked paprika
½ tsp. sriracha sauce or other hot sauce, or more to taste
¾ cup/3 oz. chopped tomatoes
2 Tbsp. capers
1 Tbsp. chopped parsley
Toasted bread and crudité to serve
Place the cream cheese, sour cream, tuna, onion, cucumber, dill, lemon juice, smoked paprika and sriracha sauce. Mix well. Season with salt and pepper to taste. Place in a serving bowl. Toss together the tomatoes and capers. Sprinkle over the tuna tip. Sprinkle with parsley. Serve with toasted bread and crudité.
This is a great dish that will bring in lots of compliments, and give you the pleasure of knowing that it’s healthy too!

At a time when people are told to limit many foods, seafood is among the handful of “winning” foods Americans are encouraged to eat more of for their health?”

I was curious about one more issue that I think we all have experienced at one time or another, and that is dealing with a “fussy eater“. During the holiday season or anytime, it’s always good to get some help in this area!! Tina came to the rescue. She shared the following advice and favorite kid-friendly recipe ingredients to help kids eat tastier and healthier meals.
Quoted from a recent interview Tina had with Baby Zone:
▪“Eggs are an ideal vehicle for creative dishes since they’re virtually the perfect accompaniment to other ingredients-sweet or savory. They are a nutrient-rich food as well providing essential vitamins, minerals and protein. Fish is my other favorite ingredient. Options are endless as are the nutrient benefits of fish.”
▪ To get kids to eat veggies, such as zucchini, Tina adds them to a Curried Veggie Pancake recipe. She says, “Now the kids ask for this recipe. They like the dollar-sized pancakes for a snack which is just fine with me.”
▪ Her favorite go-to meal for kids? Black bean burgers, that includes brown lentils hidden in the mix. She suggests serving them with slices of avocado and low-fat sour cream or Greek yogurt!
▪ For the holidays, she says she likes the idea of keeping things exciting by serving a new entrée or side dish, in addition to the traditional dishes!”
